You should really use a "V-block" when crosscutting cylinders but hey, what you did works so who cares

I put off watching this episode for so long because the object itself didn't interest me but now that I know why you made it, it seems really cool.

One possibility about the strips not lining up: When you cut the slots in the round slug they were perfectly aligned, right? they had to be since you cut them in one long groove. I suspect you did not keep them in the same order they were cut apart. Therefore when you glued them back together they were out of order, which might have been why the strips would not line up again. Just a thought.

Take some melted butter and brush it over the ravioli/pie crust next time! Preferably not your woodglue brush 😉

Great job for a first try. Now you know ravies are a little more square then rectangle but that's why ther called home made. As a ravie junkie I have a few cutters. Rolling pin like you made an ice cube tray like item that you fill the pockets. And my TRYED and true flintstone jelly jar from when I was a kid. Now 58 I'm careful not to break it. Thank you for an entertaining 6 minutes .

Is there a reason that you did not part the slices off rather than cut them on your chop saw?
